Red Cabbage

This is vaguely based on Bavarian style red cabbage.

Ingredients

2 tbps. olive oil
1 onion, chopped
4 tbsp. apple cider vinegar
2 cups chicken broth (a can will do in a pinch)
1/2 head red cabbage, sliced and separated
2 yellow delicious or other sweet apples, peeled, cored, and diced
2 tsp. caraway seeds
1 bay leaf
salt and pepper to taste

Procedure

  1. In a large saucepan, cook the onions with the oil until tender.
  2. Add the other ingredients, toss, bring to a simmer.
  3. Cook covered, 20-30 minutes, until the cabbage is tender, but not mushy.
