Omelet Tips

Omelets are quite easy to make, but two tips move them from good to great.
  1. Don't overbeat. There should be moderate pieces of unmixed white in the egg mixture. This makes them fluffy.
  2. Cook them in garlic butter. Everyone loves garlic butter. Garlic goes great with eggs. I have no idea why this isn't standard operating procedure.
