Awesome Southern Cabbage

This is (substantially) modified from someone's blog that I can't find anymore. If you are she, feel free to let me know.

Ingredients

5-6 slices bacon (or better roughly half a lb. slab bacon)
1 onion, chopped
6-8 cloves garlic, diced
2 tbsp. white vinegar or 4 tbsp. apple cider vinegar
2 cups chicken broth (a can will do in a pinch)
1 large head Napa cabbage
salt and pepper to taste

Procedure

  1. Dice the bacon. If slab bacon, 4mm cubes is fine.
  2. In a large pot over medium-low heat, cook the bacon until a fair bit of the fat is rendered, about 10-15 minutes.
  3. Cook the onion in the bacon until tender, 10-15 minutes. Add the garlic for the last two minutes.
  4. Meanwhile, quarter the cabbage lengthwise. Remove the core and slice the short way into 1" slices.
  5. Add broth, vinegar, salt, and pepper and increase heat to medium.
  6. Add cabbage, toss to coat, reduce heat to a simmer, cover and cook until tender but still crisp, typically about 25 minutes. Test to make sure; overcooking will make it soggy.
