Awesome Southern Cabbage
This is (substantially) modified from someone's blog that I can't find anymore.

Ingredients
5-6 slices bacon (or better roughly half a lb. slab bacon)
1 onion, chopped
6-8 cloves garlic, diced
2 tbsp. white vinegar or 4 tbsp. apple cider vinegar
2 cups chicken broth (a can will do in a pinch)
1 large head Napa cabbage
salt and pepper to taste
Procedure
- Dice the bacon. If slab bacon, 4mm cubes is fine.
- In a large pot over medium-low heat, cook the bacon until
a fair bit of the fat is rendered, about 10-15 minutes.
- Cook the onion in the bacon until tender, 10-15 minutes.
Add the garlic for the last two minutes.
- Meanwhile, quarter the cabbage lengthwise. Remove the core
and slice the short way into 1" slices.
- Add broth, vinegar, salt, and pepper and increase heat to medium.
- Add cabbage, toss to coat, reduce heat to a simmer, cover
and cook until tender but still crisp, typically about 25
minutes. Test to make sure; overcooking will make it soggy.
